French Oak barrels, 30% new Nadalie, Taransaud, BelAir and Saury. After 16 months of evelage we assemble our blend and the 2016 Mirage goes back to barrel for additional 8 months prior to being bottled unfined and unfiltered.
Profound and captivating our iconic Mirage represents the pinnacle in our wine making traditions. Inviting with rich aromas of cassis, black currant, plum and tobacco. The palate is complex and develops into ripe red berries, pepper corn, cigar box with hints of blueberries. Fleshy and elegant with a rich texture compliment the long finish.
Representing all our warmest and southern vineyards our flagship Mirage showcases nothing but our most exceptional grapes, a culmination of our precise viticulture practices. Viticulture practices such as shoot thinning, green harvest (cluster thinning) and leaf removal all help promote flavor concentration and a purity of fruit. Cluster selection and vine spacing led to a fruit count of approximately 3.1 tons per acre.
Each vineyard block was hand harvested and kept cool prior to being de-stemmed and lightly crushed into our open and closed top tanks. Cold soaked for 5 days with daily pump-overs with a total maceration of 21-25 days depending on variety. All lots were aged separately in select French Oak barrels, 30% new Nadalie, Taransaud, BelAir and Saury. After 16 months of evelage we assemble our blend and the 2016 Mirage goes back to barrel for additional 8 months prior to being bottled unfined and unfiltered.
