Both Vineyards are situated on the Black Sage Bench, where the east-west orientation and famous sandy soil provide for maximum sun exposure and great drainage. Leaf thinning also allowed for maximum sun exposure and ventilation in the fruit zone. High fruit selection accounted for 3.5 tons per acre.
Only 200 cases produced
This Bordeaux Blend is comprised of 40% Cabernet Sauvignon, 30% Merlot, 15% Malbec, 10% Cabernet Franc and 5% Petit Verdot. All grapes were hand harvested and hand sorted before the stemmed whole berries and free run juice were transferred to fermenting tanks, where they were cold soaked for five days with twice a day pump over. Fermentation was maintained at a consistent 26 degrees. Placed in select French Oak barrels for 18 months aging; wines were blended prior to bottling.
Food Pairing Notes
Serve with prime rib, tenderloin or filet, game, foie gras and strong cheese. Excellent aging potential.
