2022 Desert Hills Cactus White

Very aromatic, with plenty of floral, lychee, grapefruit and grassy notes. A nice balance of acidity and sweetness make this luscious blend a perfect pairing for shelfish and lightly spiced dishes.

Our 2021 Cactus White represents the perfect summer patio table wine. The fruit was hand harvested and carefully sorted before being destemmed. Fermentation proceeded steadily and separately in stainless steel tanks using a combination of indigenous and cultivated yeast. The wine remained in stainless steel for the duration of fermentation, in order to preserve the freshness.
