Intoxicating aromatic notes of shortbread, Werther’s originals and marzipan open to ripe pear, honeydew melon sassafras and apple cider. A rich, creamy palette is juxtaposed by bright acidy with a long and pronounced finish.
Aromatic, complex and clean, this wine offers primary fruit notes of crisp golden russet apples and ripe bose pear skin, all complimented with a delicate vanilla bean and toast note.
The grapes from Vantage Vineyard and Sage Brush, planted to clone 96 and grown on Vertical Shoot Positioning trellis system, beneﬁted from the warm summer days and cool nighttime temperatures to evenly ripen the clusters while maintaining the natural acidity in the grapes. Timely leaf pulling on the morning side of the canopy extended more intense flavors while helping with airflow and light exposure. A combination of Organic and conventional farming practices are employed on both sites.
De-stemmed without crushing directly to our press. 85.5% fermented in stainless at cool temperatures to preserve clean, bright pure aromatics of our vineyard, while 14.5% was fermented in new French oak for texture and flavor.
