Expressive, powerful, yet elegantly framed. Vivid aromas of cassis, blackberry, cedar, vanilla and nutmeg. Full bodied palate, featuring plump berry fruit and plum and red apple skin flavours. Ripe Tannins and spicy oak notes on the finish.
Cabernet Sauvignon from our 24 year old estate vines was gently destemmed for a whole berry
fermentation, with twice daily pumpovers. We later blended with a small portion of Cabernet Franc
and Syrah from our Sagebrush Vineyard, and aged in a mixture of new and older French oak barrels.
Bottled unfined and unfiltered.
Varietal: 90% Cabernet Sauvignon, 7% Cabernet Franc, 3% Syrah
Fermentation: Inoculated in Stainless steel
Maturation: 20 months in French oak, 15% new
