2018 Desert Hills Cactus White
A representation of our South Okanagan vineyards and viticulture practices. Among other things vertical shoot positioning, shoot thinning, green harvest (cluster thinning), and light leaf removal on the morning side of the canopy were employed. These practices promote higher concentration and a greater quality grape. All fruit is hand harvested in the early morning and brought to the winery while still cool.
The 2018 Cactus White is a blend of 40% Gewurztraminer, 22% Viognier, 14% Chardonnay, 14% Sauvignon Blanc and 11% Pinot Gris. All varieties were de-stemmed and lightly crushed directly to our press. Cold settling overnight prior to fermentation using a combination of indigenous and cultured yeast. The temperature was controlled at a cool 14 degrees Celsius. Blending trials began in December and the final blend was assembled in early January. The wine was stabilized, filtered and bottled at the beginning of March 2019.

Tasting Notes: Engaging and fragrant this wines delivers layers of honeydew, rose petal, melon, and stone fruits. The wine’s flavours are intense and delicious while providing great texture and a long pleasing finish. Our 2018 Cactus White is the perfect patio sipper!
