Vineyard: Eagle’s Nest is our Estate Vineyard on the Black Sage Bench, where the east-west orientation and famous sandy soil provide for maximum sun exposure and great drainage. Leaf thinning also allowed for maximum sun exposure and ventilation in the fruit zone. High fruit selection accounted for 2.5 tons per acre. Single bunch per plant for premium quality.
Winemaking: Grapes were hand harvested and hand sorted followed by the stemmed whole berries and being transferred to fermenting tanks for a five day cold soak, twice daily pump over to extract color and flavour. Fermentation was maintained at a consistent 26 degrees.
Cooperage: 85% French Oak, 15% American Oak, 23 months aging

Tasting Note: Subtle smokey notes on the nose, together with a concentrated blackberry and cassis core. This wine, a short decant, opens up into big bold baking spices and ripe red plums...A true meat and potatoes wine! Perfect with a classic steak or a nice Irish stew.
