Floral, lychee, spicy flavours with a rose petal, smooth on the mid palate and a crisp, long finish.
Drawing from four of our vineyards, the Cactus White brings forth the nuances from each – crisp aromatics over a warm climate, ripe berry. Hot days and cool nights allow for full development of the fruit, imparting a good sugar/acid balance.
A blend of 40% Viognier, 25% Chardonnay, 20% Gewurztraminer and 15% Pinot Gris. Grapes were hand harvested and hand sorted followed by a whole berry gravity “crush” with minimal skin contact. Fermentation temperature were maintained at 15 degrees to optimize flavours. Upon completion of fermentation, the wine was racked into stainless where it cold stabilized for two weeks, filtered, then bottled.

Pairs well with Asian dishes, white meats or great sipping on its own.
