Raspberry, cherry, strawberry & plum flavours with a touch of oak. A spicy black pepper on finish ad well structured tannins.
Three Boys is our estate vineyard on the Black Sage Bench, where the east-west orientation and famous sandy soils provide for maximum sun exposure and great drainage. Leaf thinning also allowed for maximum sun exposure and ventilation in the fruit zone. High fruit selection accounted for 3.5 tons per acre.
Grapes were hand harvested and hand sorted followed by the stemmed whole berries and free run juice being transferred to fermenting tanks for a five day cold soak, twice daily pump over to extract color and flavour. Fermentation was maintained at a consistent 26 degrees.
