Cassis, berry and black pepper notes are complemented by toasty oak and dark chocolate , smooth tannins and a long luscious mouth feel.
Eagle’s Nest is our Estate Vineyard on the Black Sage Bench, where the east-west orientation and famous sandy soil provide for maximum sun exposure and great drainage. Leaf thinning also allowed for maximum sun exposure and ventilation in the fruit zone. High fruit selection accounted for 2.5 tons per acre. Single bunch per plant for premium quality.
240 Cases Produced
Grapes were hand harvested and hand sorted followed by the stemmed whole berries and being transferred to fermenting tanks for a five day cold soak, twice daily pump over to extract color and flavour. Fermentation was maintained at a consistent 26 degrees.

Pairs well with red meats, spicy dishes and strong cheese.

I purchased the wine on my last trip to the area in 2017. I found the wine to be a lighter cab that works well as a starter. It compliments a richer can that one can have with the main course during dinner.
